Fresh from the coast of England, our Head Chef has added a fantastic dish to the menu this week; sea trout tartare, sushi rice and avocado served with wasabi mayonnaise.
Due to the subtle, delicate flavours and the fine texture of the trout, the avocado and sushi rice are the perfect accompaniments to this fantastic collection of ingredients.

A glass of 2016 Godello ‘Ultreia’ Raùl Pérez, Bierzo.
Bierzo is a Spanish Denominación de Origen (DO) for wines located in the northwest of the province of León (Castile and León), Spain.
The indigenous grape variety Godello shows characteristics of minerality and beautifully balanced acidity – the grape is highly aromatic, showing fresh aromas of nectarine and white peach with orange peel, lemon juice and wild flower. These notes could not be a better match for the tartare, combining the oily texture of the wine with the soft sea trout.
Additionally, the fruity aromas pair beautifully with the yuzu dressing, and the garnishing of salmon caviar goes hand in hand with the minerality of this wine.

One of the most aromatic varieties with an intense floral character of roses, quite exotic and grapey. Crisp on palate, with a herbal undertone that will subtly complement the tartare with the avocado and shiso dressing.
