Crisp raw vegetables
“As the weather begins to warm up an overwhelming desire to eat more healthily comes over me. I prepare this salad at home often when spring vegetables such as asparagus, peas, sugar snaps, radish and broad beans come into season. It’s perfect for a barbecue with grilled meats or fish. Use raw vegetables that haven’t lost any of their goodness in boiling. You’ll feel like you’re doing your body a huge favour with every crunchy mouthful”.

Marcus still wants to make sure you love his salad and ask for more! So he added preserved lemon and capers to complement the green explosion of flavours with a salty citrus and pungent hint.
